I love peppers. Anytime I can incorporate peppers into an appetizer, meal or otherwise it’s a big win for me. However, because I’m a guy, it’s been hard-wired into my DNA to also love bacon and cheese. With my wife on her way out the door for a meeting, I’d soon be with our two kids and not much of a chance to spend time in the kitchen to prepare a meal. I needed to put together something quickly that didn’t require much work. Here’s how I made them:
Fire up your grill. The coals can heat up while you’re prepping everything inside.
Cut the ends off your jalapenos, clean out the insides, and half them. Then fill them them with blocks of cheese.
Cut your bacon in to strips so that it covers the tops of your jalapenos. I also broke off some kabob sticks to hold the bacon, and cheese to the peppers. It helps when you get them the grill – otherwise you’ll find that the bacon will tend slide off.
Set your oven to broil (we’ll need it in a few minutes). Now put the peppers on the grill for about 5 – 10 minutes or until you can start to see that the skin of the peppers is starting to change color. You dont want to burn them but a little bit of color (blackish brown) is not bad at all. It will add to the flavor. Once they’ve been on the grill for about 5-10 minutes (depending on how hot your grill is) bring them inside and broil them until your bacon is cooked the way that you like it. When youre’ done they should (hopefully) look like mine below. Ideally, you don’t want to overcook the peppers so that they’re mushy. They are meant to be eaten with your hands so the pepper should still have a little crunch to it and not be too soft. However, you could eat with a fork if necessary.

YES! How easy is that. We can’t get that really yellow, strong cheese here but I reckon a good strong gooey cheddar would work?
